Dough preparation

Our dough is made using the finest Swiss flour, fresh water, yeast and a pinch of salt. This traditional recipe gives our pretzels their unmistakable flavour and the perfect texture.

Shaping

After careful proofing, the dough is shaped into its characteristic shape – a classic pretzel, roll or baguette.

Fermentationq

The shaped dough undergoes a careful fermentation phase.

Lye bath

In the lye bath, our pretzel breads get their golden-brown, crispy crust and their typical salty taste – simply unmistakable.

Flash freezing and delivery

The dough is flash frozen and delivered to our Brezelkönig stores from Emmenbrücke.

Fermentation and refinement

The dough is rested in the stores’ proofing cabinets, where they can ferment once more. Our staff then cut it as needed and refine it with additional toppings such as salt, sunflower seeds or pumpkin seeds.

Baking process

The pretzel breads are gently baked in our ovens to achieve the optimal texture and taste. We ensure the highest quality by carefully monitoring them each step of the way.

Toppings

Our sales staff produce fresh pretzel specialities all day long. They’re coated, topped or filled and assembled to offer our customers various pretzels, baguettes and rolls.

A large selection

The fresh pretzels, baguettes and rolls are now placed in the display case to give our customers the gift of oven-fresh deliciousness.
